Crepes
1 ¾ to 2 ¼ Cups milk
4 Large eggs
½ tsp Kosher salt
190 Grams AP flour
85 Grams brown butter
Extra unsalted butter for pan
Pesto and Crème Fraiche with Arugula Salad
70 grams Lightly packed basil leaves
1 clove garlic
35 Grams pine nuts
Kosher Salt
Lemon zest
½ Cup olive oil
½ Cup Parmigiano-Reggiano
2 TBS Crème Fraiche
4 cups arugula
2 Tbs lemon juice
¼ cup olive oil
Salt and pepper
Parmigiano Reggiano shavings
Crepas con Cajeta

1 qt Goats milk
1 cup sugar
½ tsp baking soda
¼ cup water
3 Mexican cinnamon sticks 4 inches long
1 Tbs Myer’s rum
Pecans, 1 cup roughly chopped
¾ cup unsalted butter
