Pie crusts you will one for each pie, the ingredients below are for an individual crust.
300 grams AP flour
36 grams sugar
3 grams salt
225 grams cold butter
4 TBS ice water
1 egg mixed with 1 Tbs milk
Lemon Meringue Pie
Filling
5 egg yolks
2 grams Kosher salt
55 grams corn starch
250 grams sugar
zest of three lemons
¾ cup fresh lemon juice
1 ¼ cup water
57 grams unsalted butter
Meringue
266 grams sugar
1/3 cup water
4 egg whites
Pinch of salt
¼ tsp cream of tartar
Tsp vanilla extract
Banana Cream Pie
2 eggs
2 egg yolks
¼ tsp Kosher salt
40 grams corn starch
250 grams sugar
3 cups milk
1 Tbs vanilla extract
57 grams unsalted butter
Whipped Cream
2 cups heavy cream
50 grams confectioners’ sugar
Vanilla extract
5 medium ripe bananas
