Lime and Coconut Potato Gratin
4 - 5 Shallots
2 Garlic cloves
2 TBSP Olive Oil
Table Salt
3 lbs/ 1.4 kg Yukon Gold Potatoes
100 grams Coconut Cream
3 limes
Black Pepper
2/4 cup plus 2 Tbs Vegetable or Chicken Stock
Crispy Aromatics
1/2 cup plus 2 Tbs Olive Oil
2 Red Chiles thinly sliced into rounds
3 Garlic Cloves thinly sliced
1/4 oz fresh Ginger peeled and julienned
4 Green Onions finely sliced at an angle
Flaked Sea Salt
Onion Rings
Dipping Sauce
1/4 Garlic Clove Peeled
5 grams fresh tumeric peedled and roughly chopped
1/8 tsp Flaked Sea Salt
7 1/2 tsp Mirin
1 TBS Lime Juice
1 Red Chile finely chopped
Onions
1 cup Buttermilk
7 1/2 tsp White Wine Vinegar
Scant 25 grams fresh Tumeric peeled and grated, or 1/2 tsp ground tumeric
7 1/2 tsp Nigella seeds
4 1/2 tsp Caraway seeds
1 lime finely zest to get 2 tsp , then cut into wedges
1 tsp Table Salt
1 onion cut into 3/4 inch pinwheels and separated into individual rings to equal 250 Grams
3 3/4 cups Sunflower oil
Flaked Sea Salt
