One red onion finely sliced to equal 150 grams
2 Qranges finely shae the peel to get six strips and juice to get 1/4 cup
2 Hibiscus tea bags
10 Allspice berries
1/4 cup white wine vinegar
1 tsp super fine sugar
1/4 tsp table salt
Avocado Crema
1 medium avocado pitted and peeled
90 grams Coconut Cream
10 grams Cilantro, roughly chopped
1 tsp Water
1/4 tsp Table Salt
Pickled Kohlrabi
1 small Kolhrabi peeled and cut into wide matchsticks
4 1/2 tsp Lime juice
1/4 tsp table salt
680 grams Oyster Mushrooms
2 Garlic cloves crushed
3 tbsp Soy Sauce
4 1/2 tsp Mable Syrup
7 Tbsp Olive Oil
1 tsp Cumin Seeds
4 dried Cascabel Chiles stem removed roughly broken
1/2 tsp Allspice berries
Tortillas
1 cup plus 2 Tbsp Masa Harina
Table Salt
1 Cup boiling water
2 limes cut into wedges
