Philadelphia Soft Pretzel

567 Grams Unbleached Bread Flour
1 3/4 tsp Salt
1 1/2 tsp Brown Sugar
1 tsp Instant Yeast
1 1/2 Cups Lukewarm Water
2 TBS melted unsalted Butter
57 Grams Baking Soda
2 Cups Warm Water, for dipping
1 Egg White, for dipping
pretzel Salt or Coarse Sea Salt, for garnish
Combine the flour, salt and sugar in a mixing bowl. In a separate bowl whisk the yeast into the lukewarm water and let stand for a few minutes.
Pour the yeaset mixture into the dry ingredients and add the oil. If using a stand mixer use the paddle attachment and mix on slow for 30 to 60 seconds. If mixing by hand use a spoon and mix until a coarse ball is formed.
Switch to the dough hook or knead by hand until the dough is slightly smoother and let rest for 5 minutes. Continue to mix or knead for another3 minutes adjusting the water or flour to form a smooth, firm but slightly tacky ball.
Tranfer your dough ball to a slightly oiled bowl
