Fried Tofu
1 small garlic clove crushed
2 TBS Soy Sauce
1 TBS Maple Syrup
1 TBS Sunflower Oil, plus 4 1/2 tsp for frying
1/4 tsp Table Salt
350 grams Firm Tofu, cut into 1 1/4 by1/2 inch rectangles
Blood Orange Nam Jim
1 1/2 tsp Basmati rice
2 tsp Aleppo Chile Flakes
4-5 Bloor oranges, juice to get 2/3 cup, cut remainder into wedges
20 grams store bought Tamarind Paste
7 1/2 tsp Fish Sauce
2 TBSP Maple Syrou
2 TBSP Soy Sauce
1/2 small Shallot finely diced
5 grams Cilantro finely chopped
600 grams pre cooked Udon Noodles
10 grams Thai Basil leaves
3 Green Onions Julienned
10 grams Cilantor leaves finely sliced
2 Red Chiles julienned
1 tsp Sesame Seeds, black or white or a mixture of both.
